Not a fan of green beer? No worries, I have the perfect green cocktail for you to celebrate St. Patrick’s day with: a Cucumber Gimlet. This refreshing twist on a classic gin gimlet is perfect for springtime!
We actually learned how to make a gimlet at our cocktail making class that we took during our visit to the Hard Truth Hills distillery this past fall. It was such a fun class, and we have been making these at home ever since.

Cucumber Gimlet with Hard Truth Gin
Ingredients:
- 3 oz. Hard Truth Gin
- Juice of 1 lime or 1 oz. lime juice
- 1.5 Simple Syrup
- 6-8 slices of cucumber with skin removed
- Ice
- Mint for Garnish
Directions:
- Muddle the cucumber slices in a glass
- Add gin, lime juice, simple syrup, and muddled cucumber to a cocktail shaker over ice
- Shake, and double strain into a cocktail glass
- Garnish, and enjoy!
