Today marks the OFFICIAL start of summer! This means warm weather, cook-outs, sunshine, and of course, summer cocktails. Rum is definitely a summertime favorite of mine, and Hard Truth’s Toasted Coconut Rum takes every drink to a whole new level!
The first time we sampled the Toasted Coconut Rum during our Hard Truth Hills distillery tour last year I was blown away. It smells like a coconut candle, and is very smooth to sip. This rum is easy to drink alone, perfect over crushed ice with a squeeze of lime, or in a tropical cocktail. I’ve been so excited to try it out in some different cocktails for the summer, and I started out with one of their signature recipes!
I went with the “Hawaiian Mule” for my first cocktail recipe of the summer, and I can’t get over how perfect this combination is. It is made up of the Hard Truth Toasted Coconut Rum, fresh lime juice, and ginger beer. You don’t even need any fancy tools or a cocktail shaker for this one.. just a mule glass and ice! There is nothing better than an ice cold mule on a hot day.
- 2 oz Hard Truth Toasted Coconut Rum
- Juice of half a lime
- Ginger beer
- Mule glass
- Fill a mule glass with ice
- Add rum and lime juice
- Top with ginger beer
- Gently stir
