Slow Cooker Chicken & Dumplings

Wintertime means cold weather, and to me that means living off of crock pot meals. I love making a huge batch of these meals so we can enjoy leftovers throughout the busy week. This Slow Cooker Chicken and Dumplings is the ultimate comfort food, and it’s so simple to make in the slow cooker for those who don’t have time to make it from scratch!

Ingredients:

  • 3-4 boneless chicken breasts
  • 1 onion, diced
  • 1 10.5 oz can cream of chicken soup
  • 1 10.5 oz can cream of celery soup
  • 2 cups chicken broth
  • 1 teaspoon poultry seasoning
  • 1 tablespoon parsley
  • 1 teaspoon black pepper
  • 1 12-16 oz bag of frozen peas/carrots or frozen vegetables
  • 1 8 piece can of buttermilk biscuits
  • 1 additional can of biscuits for serving (optional)

Instructions:

  • Spray crock pot with cooking spray, turn on high and add diced onion and chicken breasts
  • In a separate bowl, combine canned soups, seasonings and broth
  • Pour mixture over chicken
  • Let cook on high for 4+ hours
  • After 4 hours, remove chicken, lightly shred with two forks, and then return to crock pot
  • Open one 8 piece can of buttermilk biscuits and roll each raw biscuit flat. Cut each one into 5-6 thin strips
  • Stir biscuit strips and bag of frozen vegetables into the crock pot
  • Cook on high one additional hour
  • Serve in bowls or even over extra biscuits
  • Enjoy!
